HACCP Documentation

HACCP documentation by HACCP.ae has proven to be at high excellence as it have been subject to numerous verification from HACCP third-party audits. Effective HACCP documentation includes policy and objectives, related standard operating procedures, plans and programs and records of implementation.

As minimum, effective HACCP documentation includes:

• template for HACCP team composition covering names of HACCP Team Leader and HACCP team members and approval of top management. This is supported with appointment letter of HACCP Team Leader stipulating his/her roles and responsibilities towards HACCP. HACCP team responsibilities is a separate document in addition to the aforementioned.

• template for product description specifying and defining information such as product name and category; food safety characteristics; shelf-life; storage conditions; labelling requirement, allergen information etc.; method of production; transportation methods; preparation and/or handling; acceptance criteria or specifications.

• description of intended use is captured in the template of product description in addition to information mentioned in item 2.

• illustration of flow diagram showing sequence and interactions of all steps in the process. This will include approval of the HACCP team to evidence that they have confirmed the onsite verification for accuracy of the same.

• a comprehensive hazard analysis and risk assessment including definitions of important terms, instruction on how to carry out the risks assessment and risk assessment matrix. HACCP team approval at last part to evidence that they have carry out the HACCP study of their processes with the guidance of HACCP.ae’s experts.

• series of questions answered in logical sequence to determine if step in the flow diagram a critical control point (CCP). Approval of HACCP team included here to evidence that they have used a logical methodology approach for decision making.

• templates for monitoring the critical limits to demonstrate that the activity is carried out according to the established frequency.

• log of corrective actions to manage deviation when it occurs covering corrections, root cause analysis and corrective action to prevent recurrence.

• a comprehensive HACCP plan to document critical control point (CCP) including CCP ID; hazard to be controlled; critical limit; monitoring activity and frequency; correction activity and responsibility; corrective action; responsibility for monitoring, corrections and corrective action; records and its location; HACCP plan verification and validation activities. In addition, product description, flow diagram and summary of hazard analysis and risk assessment can be found in the HACCP plan as well.

• a comprehensive PRP verification to capture PRPs, verification activities, related documents and records, responsibilities and frequencies.
